Summer Vegetable Purees and Finger Foods for Baby

Summer is here and with everything going on right now, many of us have either started our first garden or ramped up our previous efforts. CSAs and Farmers' Markets are another fantastic way to get seasonal, local, often organic, produce for your family and support your community at the same time. If you are looking to use up and enjoy your summer bounty, here are a few baby puree recipes and finger food ideas to celebrate the delicious vegetables of the summertime.

Yellow Squash + Carrot + Quinoa

1/2 yellow squash, peeled and diced
1 medium sized carrot, peeled and diced
¼ cup quinoa, cooked
  1. Steam squash and carrot for 3-4 minutes until soft and tender
  2. Blend all ingredients together until smooth and serve

Roasted Red Pepper + White Bean

2 roasted red bell peppers, skins removed (you can use jarred or roast from scratch)
¼ cup organic canned cannellini beans, rinsed (if you cook your own, that's great too!)
*Optional: 1-2 fresh basil leaves
  1. Blend all ingredients together until smooth and serve

Buttery Peas + Mint 

½ cup cooked peas
1-2 mint leaves
1 tsp grass fed butter, melted
  1. Blend all ingredients together until smooth and serve

Finger Food Ideas for 12+ Months

  • Kale Chips + Nutritional Yeast - Preheat oven to 325. Toss 1 bunch kale with 1 tbsp olive oil, spread in an even layer on a cookie sheet and bake until crisp, about 20 minutes, tossing halfway through. Sprinkle with nutritional yeast to taste.
  • Cucumber Sticks + Yogurt Dip - Cut cucumber into sticks and serve beside unsweetened whole milk yogurt as dip (you can add some fresh dill to the dip for extra flavor)
  • Tomato Slices + Ricotta - Cut tomato into wedges and dollop with a tbsp of ricotta or cottage cheese
  • Avocado Slices + Toasted Sesame Seeds - Cut into slices and sprinkle with seeds
  • *Black Bean & Corn Quesadillas - Prepare 1 pouch of Amara Black Beans and Sweet Corn. Warm a tortilla, spread with Amara puree, sprinkle with shredded cheese, fold and serve.
